Easy Southwestern Stroganoff

I got this recipe from Betty Crocker's winter meals magazine. Once I tasted it I couldn't get enough of it. It's quick and your kids will love it.
Directions:

Cook beef in a 10-inch skillet over medium heat, stirring occasionally, until brown, drain.

Stir in water, salsa, salt and pasta.

Heat to boiling, reduce heat.

Cover and simmer about 15 min.

,stirring occasionally, until pasta is tender.

Stir in sour cream, cook until just hot.

It tastes exactly how you would expect it to--like salsa, sour cream, and beef on pasta. I wouldn't call it stroganoff--it's more like noodle nachos. If it's this or Hamburger Helper, though, this is perfectly good stuff.

Quick, good, and easy. My husband liked it a lot and actually ate too much. A good meal to fix if you're in a hurry.

We loved it. Super easy and fresh tasting dinner! I sprinkled shredded cheddar over the top while still in the skillet and put the lid on for a minute or two to melt just before serving. YUMMM and I had the leftovers for lunch the next day and of course it was even better!
